晚餐

下午出去买菜, 看到店里的8oz ribeye steak在打折, 一时兴起就买了. 决定晚上回来小资一下, 吃烤牛排+salad.

回来先调salad.
之前买了两个avocado(牛油果)不知道怎么吃, 于是上网搜了下recipe, 大多都说和番茄芒果什么的拌了吃, 看着五彩缤纷的怪漂亮, 心动…于是动用了幸福的小chopper, 碎了一个小洋葱,一点香菜,两瓣蒜混成salsa.洋葱虽然小, 但是一个还是怪多的, 于是我决定用一半来调salad, 一般和上butter来烤牛排.接着把一个avocado, 一个番茄和一个芒果切丁, 混上洋葱什么的salsa, 加了一点盐, 一勺lime juice, 淋了点extra virgin olive oil, 红黄绿散布着果然煞是好看. 如果不混合那个salsa估计更干净漂亮了.

不知道为啥最近照片exif信息总被消除了, 啥时候钻研下是哪步出了问题…

然后烤牛排.
拿回家后牛排已经完全解冻了, 我直接丢进冷冻阁稍微冻硬了点切成两半. 把洋葱,香菜和蒜搅成的salsa和butter调在一起.
心爱的小grill插电升温到足够, 然后把牛排两面分辨撒了点盐, 胡椒, 抹上混合好的butter, 放进grill里烤. 过了一阵伴随着滋滋的声音, 混合着洋葱,butter的烤肉香就飘出来了…我生怕没烤够, 半inch厚的steak硬是烤了10分钟…结果烤的太久, 之后rest又太久都有点干了, 整个太过well done了, 不够juicy.下次再烤, 即使想烤的熟点, 估计6,7分钟也就足够了.
那个洋葱调的butter刷在牛排上烤了后依然剩一大堆, 于是我加了点mustard, 胡椒辣椒粉什么的杂七杂八调起来堆在盘子上当butter酱蘸牛排吃, 美味之极~

Mascarpone Cheese Cake

Mascarpone cheese大致算是italy的cream cheese? 好像它应该算cream多过cheese.
这次买了一盒尝试来做cheese cake,可能更creamy, 更甜一点? 上次做9寸大盘的chocalate cheese cake没吃完,这次买了个8寸的蛋糕盘来烤, 大小貌似还比较合适.烤出来结果不错,
不过切蛋糕要用蘸了热水的刀来切比较好, 我偷懒省掉热水, 结果切出来粘刀的很, 七零八落不美观.

大致按下面的方子做的, 省掉了topping. 没有fresh lemon, 就用了一小勺key lime juice代替了.没有slivered almonds, 就crush了一切腰果花生之类的混在graham cracker里做crust.
我做的是1/2分量的, 大约烤了45-50分钟, 就关火了然而还是继续把蛋糕放烤箱里直到冷却.

Ingredients
Crust:

* 1 cup slivered almonds, lightly toasted
* 2/3 cup graham cracker crumbs
* 3 tablespoons sugar
* 1 tablespoon unsalted butter, melted

Filling:

* 2 (8-ounce) packages cream cheese, room temperature
* 2 (8-ounce) containers mascarpone cheese, room temperature
* 1 1/4 cups sugar
* 2 teaspoons fresh lemon juice
* 1 teaspoon vanilla extract
* 4 large eggs, room temperature

Topping:

* 1/2 cup chocolate-hazelnut spread (recommended: Nutella)
* 1/4 cup whipping cream

Directions

For the crust: Preheat oven to 350 degrees F.

Tightly wrap the outside of a 9-inch diameter springform pan with 2 3/4-inch-high sides with 3 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, and sugar in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Bake the crust until it is set and beginning to brown, about 12 minutes. Cool. Decrease the oven temperature to 325 degrees F.

For the filling: Using an electric mixer, beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula. Beat in the lemon juice and vanilla. Add the eggs, 1 at a time, beating just until blended after each addition.

Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour 5 minutes (the cake will become firm when it is cold). Transfer the cake to a rack; cool for 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days.

For the topping: Combine the chocolate-hazelnut spread and cream in a small bowl. Heat in the microwave until warm, stirring every 20 seconds to blend, about 1 minute.

Cut the cake into wedges. Drizzle the chocolate sauce over the wedges and serve.

自从听朋友建议半信半疑地买了个小grill, 我就经常发现自己半夜在房里烟雾缭绕地烤面饼,鸡翅,排骨, 鱼fillet, bacon…还配上洋葱,或者用小chopper搅出各种奇怪的配料糊糊,比如香菜和洋葱加蒜和番茄?用来腌鱼呀夹饼之类。

实际上自从前一段开始看food network以来,我就仿佛渐渐重新捡起了对食物的热情…

看到电视里厨师们的激情和创意,我也不由心潮澎湃!于是开始奔向厨房!

然后就像每次看到别人的艺术作品深深feel inspired!然后自己动手!的结果一样…

一片mess之后,我就心如止水了。

 

不过也没啥。

天天在电视上看到某牛排馆的“lobster stuffed filet”,那个华丽,那个诱人…

然后在网上一查,fb上一群傻x说的天上有地上无诸如“heaven”之类的词乱飞…

于是我终于扛不住飞奔去花了26刀激动地捧了一份回来。小小一份7oz牛排,上面半只小指长的微型龙虾尾巴…离heaven着实相差甚远.
所以说艺术总是…高于生活的。

这么一想我就释然了。

我终究不是个艺术家。不过还活着。
